- 5 egg yolks
- 1/2 cup sugar
- 7 tablespoons unsalted butter
- 4 teaspoons vanilla sugar
- 3/4 cup milk
- 0.7 oz fresh yeast
- Pinch of salt
- 1.1 lbs semi-fat cheese, cubed
- 1/2 cup sugar
- 4 teaspoons vanilla sugar
- 1 egg
- Additionally, 7 oz cherries in syrup or frozen
- 1 1/4 cups all-purpose flour (for crumble)
- 1/3 cup sugar (for crumble)
- 5 1/2 tablespoons unsalted butter (for crumble)
Instructions
- Warm up the milk, add the yeast and some sugar, mix well, and let it sit for a moment.
- In a bowl, combine the flour, remaining sugar, vanilla sugar, egg yolks, salt, and the yeast mixture.
- Start kneading, then add melted butter and knead for a few more minutes until the dough is smooth.
- Let it rise in a warm place for about an hour until it doubles in size. Afterward, transfer the dough to a baking tray lined with parchment paper, spreading it evenly.
- Mash the cheese with a fork, add sugar and egg, mix well, and spread evenly over the dough. At this stage, you can add cherries or other fruits, like raspberries. If using frozen, no need to thaw.
- For the crumble topping, combine the flour, sugar, and butter until crumbly. Sprinkle it over the cake.
- Let it rest on the counter for another 20 minutes to rise, then bake in a preheated oven at 340°F (170°C) for about 30-35 minutes until golden brown.
