No Bake Chocolate Vanilla Layer Cake
A tender cookie base and a chocolate layer on vanilla cream - this cake simply tastes like the Monte milk cream dessert of yesteryear! A no-bake cake that's quick to make, will delight young and old alike, and is a delightful refreshment straight from the fridge on warm summer days

for the vanilla cream:
- 1.5 l milk
- 150 g cornstarch
- 100 g sugar
- 2 pck. vanilla sugar
- 160 g butter
for the chocolate layer:
- 400 g dark chocolate
- 600 g cream
Place a pastry on a baking tray lined with baking paper (size approx. 35 x 26) and spread the butter cookies in it.
Stir 250 ml milk with cornstarch, sugar and vanilla sugar until smooth. Bring the remaining milk to the boil, slowly stir in the starch mixture. Simmer for 2 minutes, then remove from heat and stir in butter completely.
Spread cream evenly over butter cookies, smooth and let cool in refrigerator for at least 2 hours.
Coarsely chop the dark chocolate. In a saucepan, bring cream to a boil and then briefly stir in the chocolate pieces. Let cool slightly and then pour evenly over the milk filling.
Refrigerate the cake for at least 2 hours, but preferably overnight.
