Sweet pumpkin fritters! They are seriously, seriously delicious! I love these things 😋 And you know what? They’re super easy to make!
Ingredients:
- For the Pumpkin Fritters:
- 1 cup pumpkin puree , the puree should have a firmer, not too runny consistency if possible.
- 1 cup all-purpose flour (possibly a bit more, depending on how moist or firm the pumpkin puree is)
- 2 eggs
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 teaspoon Pumpkin Spice
- A pinch of salt
- Oil for frying
Also:
Pumpkin Spice Sugar (simply mix sugar with a bit of Pumpkin Spice) or alternatively, cinnamon sugar for coating
Great toppings include:
- Maple syrup, honey, or agave nectar
- Vanilla sauce or vanilla ice cream
Instructions:
Mix all the ingredients for the pumpkin fritters until creamy. Depending on the consistency of the pumpkin puree, you may need to adjust the amount of flour. The batter should no longer be too runny and should be portionable with a large spoon. If it’s too runny, just add some more flour and stir.
Now, heat the oil in a deep frying pan and fry the batter in portions on both sides like thick little pancakes. Remove the fritters when they turn golden brown, and then roll them in Pumpkin Spice Sugar right away.
Make sure to serve the pumpkin fritters fresh. They go well with maple syrup, honey, or agave nectar, as well as with vanilla sauce or vanilla ice cream. Enjoy! 🥞🎃
