Ingredients

  • 1 cup (2 sticks) salted butter, at room temperature
  • 1 cup packed light brown sugar
  • ½ cup granulated white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2½ cups all-purpose flour
  • 2 cups semi-sweet chocolate chips
  • One 14-ounce can sweetened condensed milk
  • 10 ounces soft caramels (about 40 caramels, unwrapped)
  • 1 teaspoon flaked sea salt

Instructions

  1. Preheat your oven to 350°F. Line a 9x13-inch baking pan with foil and generously coat with cooking spray.
  2. Mix the dough: In a large bowl, use an electric mixer to beat the butter and both sugars on medium speed for about 2 minutes, until fluffy. Add the eggs, vanilla, salt, and baking soda, mixing until smooth. Gradually add the flour on low speed until fully combined. Stir in the chocolate chips.
  3. Press the dough: Press three-quarters of the cookie dough into the prepared pan, spreading it evenly across the bottom.
  4. Make the caramel: In a medium saucepan, combine the sweetened condensed milk and caramels. Cook over medium-low heat, stirring frequently, until the caramels are fully melted and the mixture is smooth.
  5. Layer the caramel: Pour about three-quarters of the caramel mixture over the dough in the pan. Drop the remaining cookie dough in teaspoon-sized portions over the caramel layer. Save the leftover caramel – it’s perfect for drizzling over ice cream later!
  6. Bake: Place the pan in the oven and bake for 25 to 30 minutes, or until the center is just set. The top should be golden brown.
