Red Velvet Cookies
Ingredients
- 2 cups (220g) all-purpose flour
- 1.5 tablespoons (16g) cocoa powder
- 1 scant teaspoon baking soda
- A pinch of salt
- 1/2 cup (110g) butter
- 1/2 cup plus 2 tablespoons (100g) brown sugar
- 1/4 cup plus 1 tablespoon (60g) granulated sugar
- 1 egg
- 1 teaspoon vanilla extract or 1 packet of vanilla sugar
- 1 teaspoon red food coloring (I use gel)
- Optional: 5.3 ounces (150g) white chocolate
Instructions
- Mix the dry ingredients together.
- Cream the butter and sugar until fluffy.
- Add the egg and beat for another minute.
- Stir in the food coloring and vanilla.
- Add the dry ingredients and mix until combined, then fold in the chocolate. (The dough should be slightly sticky; if too runny, chill for 1-2 hours.)
- Shape the dough and refrigerate for at least 1-2 hours.
- Preheat the oven to 175°C (350°F) and bake for about 12-13 minutes. (Mine took 13 minutes at 175°C.) Baking time may vary slightly depending on the size of your cookies.
