Ingredients

  • 1 1/2 cups cookies
  • 1/4 cup butter
  • 2.2 lbs cream cheese
  • 4 eggs
  • 1 cup sugar
  • 1 tablespoon vanilla sugar
  • 1 cup heavy cream
  • 1 cup pistachio paste
  • 3-4 grams salt

Instructions

  1. For the cookie crust, blend the cookies into crumbs and mix with melted butter until combined. Press the mixture into the bottom of a 9.5-inch diameter pan lined with parchment paper, ensuring the parchment is folded upwards to create a bowl shape.
  2. For the cheesecake filling, mix cream cheese, eggs, sugar, vanilla sugar, heavy cream, pistachio paste, and salt until just combined. Pour the batter into the prepared pan.
  3. Bake at 220°F (105°C) for about 35 minutes, then leave the cheesecake in the oven with the door slightly ajar to cool.
  4. Chill the cheesecake overnight in the refrigerator before serving.
