Nutella Cake
Ingredients
- For the Cake:
- 5 large eggs
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 cup Dutch-process cocoa powder
- 1 cup water
- 2 tablespoons instant espresso powder
- 1/2 cup unsalted butter, melted
- For the Frosting:
- 16 oz cream cheese, softened
- 2 cups unsalted butter, softened
- 2 cups Nutella
- 1/2 cup cocoa powder
- 2 1/2 cups powdered sugar
- 1/2 teaspoon salt
Instructions
Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease and line three 9-inch cake pans.
Make the Cake Batter:
In a stand mixer, beat the eggs on high speed for about 4 minutes using the whisk attachment.
Gradually add the granulated sugar and continue beating on high for another 4 minutes.
Mix in the vanilla extract and buttermilk until just combined.
Dissolve the instant espresso powder in 1 cup of room temperature water, then add it to the egg mixture along with the melted butter.
Sift together the flour, salt, baking soda, baking powder, and cocoa powder. Gently fold the dry ingredients into the wet mixture until well incorporated.
Bake the Cakes:
Divide the batter evenly among the three prepared cake pans.
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for a few minutes, then transfer them to cooling racks to cool completely.
Prepare the Frosting:
In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
Add the cocoa powder, powdered sugar, salt, and Nutella, beating until the frosting is light and fluffy.
Assemble the Cake:
Once the cakes are completely cool, level the tops if needed with a serrated knife.
Place the first cake layer on a serving plate and spread a generous amount of frosting on top.
Repeat with the remaining layers.
Frost the sides and top of the cake with the remaining Nutella buttercream frosting.
