Fairy Kisses with Toffifee
Ingredients
- Dough:
- 1 egg
- 1/2 cup (125g) cold butter
- 1 cup (125g) powdered sugar
- 2 cups (280g) flour
- 1 packet of vanilla sugar
- Meringue:
- 4 egg whites
- 1 1/4 cups (250g) sugar
- 1 teaspoon cornstarch
- A good pinch of salt
- Additionally:
- 45 Toffifees
Instructions
- Preparation:
- Preheat your oven to 300°F (150°C) with both upper and lower heat.
- Line baking trays with parchment paper.
- Making the Dough:
- In a large mixing bowl, beat together 1 egg, 1/2 cup (125g) cold butter (cut into cubes), and 1 cup (125g) powdered sugar until creamy.
- Add 2 cups (280g) flour and 1 packet of vanilla sugar to the mixture. Combine until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Making the Meringue:
- In another clean mixing bowl, beat 4 egg whites with a pinch of salt until soft peaks form.
- Gradually add 1 1/4 cups (250g) sugar, continuing to beat until stiff peaks form.
- Sprinkle in 1 teaspoon of cornstarch and beat until well incorporated.
- Assembling the Cookies:
- Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
- Use a cookie cutter to cut out circles from the dough.
- Place the dough circles on the prepared baking trays.
- Press a Toffifee candy into the center of each dough circle.
- Spoon a dollop of meringue on top of each Toffifee candy, covering it completely.
- Baking:
- Bake the cookies in the preheated oven for about 20-25 minutes, or until the meringue is lightly golden.
- Remove from the oven and let cool on the baking trays for a few minutes before transferring to a wire rack to cool completely.
