The classic among the muffin recipes! These muffins are super easy and quick baked and become extra juicy by the lemon juice.
Easy and Delicious Lemon Muffins
Ingredients:
- 150 g soft butter
- 120 g sugar
- 1 pck. vanilla sugar
- 2 eggs (size M)
- 2 lemons
- 1 pinch of salt
- 250 g wheat flour
- 2 tsp. baking powder
- 3 tbsp. lemon juice
- 100 g powdered sugar
- some lemon zest for decoration (optional)
Directions:
Mix butter with sugar and vanilla sugar. Stir in eggs little by little. Grate the zest of the lemons and squeeze out the juice. Add both to butter-sugar mixture and mix. Mix salt with flour and baking powder and add to the batter and stir in.
Preheat oven to 180 degrees (convection oven: 160 degrees). Line the troughs of a muffin tray with muffin cups. Using an ice cream scoop or two teaspoons, divide the batter among the muffin cups. Bake in the preheated oven for about 25 minutes. Let cool completely.
For the glaze, pour lemon juice into a bowl and add powdered sugar. Mix well until no lumps are visible. If the mixture is too thick or too thin, simply add a little more lemon juice or powdered sugar. Spread frosting over cupcakes with a teaspoon and let set.
