A fun and nostalgic twist on the classic peanut butter and jelly sandwich!

Ingredients

  • 1 cup (258 g) crunchy peanut butter
  • ¾ cup (165 g) light brown sugar, packed
  • ½ cup (113 g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups (227 g) all-purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup (255 g) jelly or jam (any flavor)
  • ½ cup (73 g) salted peanuts, coarsely chopped

Instructions

1️⃣ Prep the Pan – Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with foil, leaving an overhang for easy removal. Lightly coat with cooking spray.

2️⃣ Mix the Dough – In a large bowl, beat together peanut butter, brown sugar, and butter until smooth. Add the egg and vanilla, mixing until well combined.

3️⃣ Combine Dry Ingredients – In a separate bowl, whisk together flour, salt, and baking powder. Gradually mix into the peanut butter mixture until just combined.

4️⃣ Layer the Bars – Press ⅔ of the dough into the bottom of the prepared pan. Spread your favorite jelly or jam evenly over the dough. Crumble the remaining dough over the top and sprinkle with chopped peanuts.

5️⃣ Bake & Cool – Bake for 30-35 minutes, or until golden brown on top. Let cool completely in the pan before lifting out using the foil overhang. Slice into squares and enjoy!
