Disney’s Apple Caramel Pie is a must-have for this holiday season, especially during the fall. You’ll adore the sugar cookie base, the apple filling spiced with cinnamon, a delightful crunchy topping, all beautifully coated with caramel.
Ingredients:
Crust
- About 16.5 ounces of refrigerated sugar cookie dough (we used Pillsbury)
- 1/2 cup of flour
Filling
- Approximately 2.5 pounds of apples, peeled, cored, and thinly sliced (Honey Crisp or Granny Smith works great)
- 1/2 cup of sugar
- 1/8 cup of flour
- 1.5 teaspoons of apple pie spice
- 1.25 cups of caramel topping
Topping
- 1 cup of flour
- 1/2 cup of packed brown sugar
- 1/2 cup of sugar
- 1 teaspoon of vanilla
- 1.5 teaspoons of apple pie spice
- 1/2 cup of butter
Instructions:
- Preheat your oven to 350 degrees. Lightly grease a 10-inch springform pan or a similar pan with an edge.
- Combine the cookie dough and flour in a bowl until well mixed.
- Press this mixture into the bottom of the pan, making sure to go up the sides of the pan by about 3/4 inch. Ensure there are no holes in the crust.
- In another mixing bowl, toss the apples with sugar, flour, and apple pie spice, then spread this mixture evenly over the prepared crust. Drizzle 3/4 cup of caramel topping over the apples. Cover with aluminum foil and bake for approximately 45 minutes.
- While the pie is baking, prepare the topping. Combine flour, brown sugar, sugar, vanilla, and apple pie spice.
- Cut in the butter until the mixture forms a wet crumb mixture.
- Remove the pie from the oven and take off the foil. Sprinkle the crumb mixture over the warm pie.
- Place the pie back in the oven uncovered and continue baking for another 15 to 20 minutes or until the topping is lightly browned.
- Let the pie cool, then remove the sides of the springform pan. When ready to serve, slice the pie and drizzle additional caramel topping over each slice.
