Cinnamon Rolls
As we’re slowly heading into fall, it means tea, Harry Potter, and warm cinnamon rolls for me 🥺🫶🏻! How about you?
Ingredients: For the Dough:
- 3 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 ounce (about 2 1/2 teaspoons) fresh yeast or 1 packet dry yeast
- A pinch of salt
- 1 packet of vanilla sugar
- 1 cup plant-based milk (240ml)
- 3 1/2 tablespoons vegan butter or margarine
For the Filling:
- 1/4 cup (60g) softened vegan butter or margarine
- 2 teaspoons ground cinnamon
- 1/4 – 1/3 cup (60-80g) sugar
For the Glaze:
- 3/4 cup (100g) powdered sugar
- 3 tablespoons lemon juice
Instructions:
- For the dough, mix flour, sugar, yeast, salt, and vanilla sugar in a bowl.
- Warm the plant-based milk and vegan butter in a pot until the butter melts. Add this mixture to the dry ingredients and knead everything together using a hand mixer with dough hooks until the dough is no longer sticky.
- Cover the dough and let it rise in a warm place for 1 hour.
- Knead the dough again and roll it into a rectangle on a floured surface.
- For the filling, spread the softened vegan butter evenly over the dough.
- Mix cinnamon and sugar in a bowl and sprinkle it over the dough.
- Roll up the dough tightly from a long side and cut it into 8-12 equal pieces.
- Line a baking sheet with parchment paper, place the cinnamon rolls on it, and let them rise for another 20 minutes.
- Meanwhile, preheat the oven to 356°F (180°C) with the fan on.
- Put the cinnamon rolls in the oven and bake for 15-20 minutes. Take them out and let them cool.
- For the glaze, sift the powdered sugar into a bowl and mix it with lemon juice until you have a thick glaze.
- Spread the glaze over the cinnamon rolls and let it firm up. Enjoy!
