Cinnamon and Fresh Fruit Brioche
Ingredients
- 2 1/3 cups (600g) all-purpose flour
- 2 eggs
- 3 tablespoons honey
- 3/4 cup (200ml) milk
- 1/2 cup (100g) sugar
- 2 tablespoons butter
- 2 1/2 teaspoons active dry yeast
- Pinch of salt
- 2 tablespoons cinnamon
- 1 tablespoon cocoa powder (sweetened)
- 1 tablespoon brown sugar
Instructions
Dissolve the yeast in a little water or milk with 1 teaspoon of sugar, then add the flour and all other ingredients.
Knead for 10 minutes.
Let it rise for about an hour.
Prepare a baking pan by greasing it with butter and flour.
Make small sticks about 8-12 inches.
Roll them flat with a rolling pin.
Spread the cinnamon mix on top.
Fold over/close from one side.
Make small cuts along the length.
Roll from one end to another.
Place in the pan and let it rise for another 15 minutes.
Brush with a bit of milk and a pinch of brown sugar.
Bake at 350°F (180°C) for 40 minutes.
