  • 32 caramel squares, unwrapped
  • 1/2 cup heavy cream
  • For the Cookie Base:
  • 3/4 cup butter, melted
  • 3/4 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • For the Filling:
  • 6 ounces semisweet chocolate chips

Instructions

Preheat and Prep:

Preheat your oven to 350°F.
Line an 8x8 or 9x9 baking pan with foil or parchment paper, allowing some overhang for easy removal later.

Make the Caramel Sauce:

In a small saucepan, combine the unwrapped caramel squares and heavy cream over low heat.
Stir frequently until the mixture is completely smooth, then set it aside.

Prepare the Cookie Base:

In a medium bowl, mix together the melted butter, brown sugar, flour, oats, and baking soda until well combined.
Pat half of this oatmeal mixture evenly into the bottom of your prepared baking pan.

Bake the Base:

Bake the base in the preheated oven for 10 minutes.
Remove from the oven and sprinkle the chocolate chips evenly over the crust.

Add Caramel and Crumble Topping:

Pour the smooth caramel mixture over the chocolate chips.
Crumble the remaining oatmeal mixture over the top of the caramel layer.
