With a spice cake crust, a rich apple butter filling, and a caramel drizzle, these bars are the epitome of autumnal bliss

Ingredients

  • For the Crust:
  • 1 box spice cake mix
  • 1 egg
  • 1/2 cup (1 stick) melted butter
  • For the Filling & Drizzle:
  • 1 (8 oz) package cream cheese, room temperature
  • 1 cup apple butter (homemade or store-bought)
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple pie spice
  • 3 eggs
  • 1 (16 oz) box powdered sugar
  • 1/2 cup (1 stick) melted butter
  • Caramel sauce or dulce de leche for drizzling

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F. Line a 13x9-inch baking pan with foil, making sure the foil hangs over the edges for easy removal. Spray the foil with cooking spray and set aside.
  2. Make the Crust: In a large bowl, mix together the spice cake mix, egg, and melted butter until a thick dough forms. Press this dough evenly into the prepared pan and set aside.
  3. Prepare the Filling: In a stand mixer bowl, cream together the cream cheese, apple butter, and brown sugar until smooth (about 1 minute). Add the vanilla extract, apple pie spice, and eggs one at a time, mixing well after each addition. Mix in the powdered sugar, followed by the melted butter. Beat until fully combined.
  4. Assemble and Bake: Pour the apple butter filling over the crust. Bake for about 35-45 minutes, or until the center is set but still slightly jiggly. If the center is too loose, bake in 5-minute increments until done.
  5. Cool and Chill: Let the bars cool completely in the pan, then refrigerate for at least 2-3 hours or until fully set.
  6. Serve: Cut into bars and drizzle with caramel sauce or dulce de leche just before serving.

Enjoy these scrumptious Caramel Apple Butter Gooey Bars, perfect for any fall occasion!
