It’s spooky season, and I’ve got a fun treat for you – fudgy brownie candles filled with Carnation caramel drizzle sauce to share and enjoy with your loved ones this Halloween.
Ingredients:
BROWNIES (Makes 9 single layer 2” candles / 4 double layer 2” candles / 2 double layer 3” candles):
- 6.7 ounces butter or buttery baking spread (about 190g)
- 7 ounces dark chocolate (under 60% cocoa, about 200g)
- 6.7 ounces plain flour (about 190g)
- 1.8 ounces cocoa powder (about 50g)
- 2 large eggs
- 6.7 ounces caster sugar (about 190g)
- 2.1 ounces light brown sugar (about 60g)
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
FILLING:
- Carnation Caramel drizzle sauce
CHOCOLATE GANACHE:
- 10.6 ounces dark chocolate (about 300g)
- 5.4 ounces double or heavy cream (about 160ml)
- 2 tablespoons black food coloring for chocolate
CHOCOLATE DRIP:
- 3.5 ounces dark chocolate (about 100g)
- 2 tablespoons black food coloring for chocolate
Instructions:
- For the Brownies: Start by melting the dark chocolate and butter in the microwave, heating it for 20 seconds at a time. Set it aside to cool a bit.
- In a separate bowl, mix the eggs, sugar, and vanilla extract with an electric beater or stand mixer until it’s creamy. Then pour in the melted chocolate and butter and mix with a spatula until well combined.
- Sift the flour, cocoa, and salt into the wet ingredients and mix until everything comes together.
- Pour the brownie mixture into a lined 20cm square baking tin and bake for 25 minutes at 338°F (170°C).
- For the Ganache: Heat the chocolate and cream together in the microwave, 20 seconds at a time, until the chocolate is soft. Mix them together and add 2 tablespoons of black food coloring for chocolate.
- While the ganache is cooling, use cookie cutters to cut out 9 circles of 2″ size from the brownies.
- To create tall brownie candles, stack 2 brownies on top of each other using 1 teaspoon of ganache. Otherwise, leave them as single-layer candles.
- Cover the brownies with cling film and place them in the fridge for 30 minutes.
- Cut a hole in the middle of the brownies and fill it with 1/2-1 tablespoon of Carnation caramel drizzle.
- Once the ganache has cooled and thickened, spread it all over the brownies to create a candle shape.
- Melt 3.5 ounces of dark chocolate in the microwave and add 1-2 tablespoons of black food coloring for chocolate. Drizzle it down the sides of the brownie candles.

Finally, push a candle into the top of each brownie. Just remember to remove the candles before serving. Enjoy your Halloween treat! 🎃🕯️😋
