Ingredients:
Brownie:
- 150g (5.3 ounces) melted dark chocolate
- 100g (1/2 cup) melted butter
- 3 eggs
- 100g (1/2 cup) sugar
- 80g (2/3 cup) flour
- 40g (1/3 cup) cocoa
- 1 tsp baking powder
- a pinch of salt
Cream:
- 1 packet of gelatin
- 500g (about 2 cups) blueberries
- 100g (1/2 cup) sugar
- 600g (2.5 cups) cream cheese
- 200g (about 1 cup) heavy cream
Decoration:
- 100g (about 2/3 cup) blueberries
- Melt the chocolate and butter in a double boiler.
- Beat the eggs with the sugar until creamy.
- Add the melted chocolate and butter, and mix everything well.
- Sift the flour, cocoa, baking powder, and salt into the mixture and fold them in.
- Pour the batter into a greased 26cm (about 10-inch) cake pan and bake for approximately 20 minutes at 160°C (320°F) with convection.
- Prepare the gelatin according to the package instructions or let it bloom.
- Lightly heat the blueberries and sugar in a pot, then puree them. Stir in the gelatin and let it cool slightly.
- Set aside 5 tablespoons of the blueberry mixture for decoration. Mix the rest with the cream cheese.
- Whip the cream until stiff and fold it into the cream cheese mixture.
- Place a cake ring around the brownie base and spread the cream on top. Chill for at least 2 hours.
- Decorate the cake with the reserved blueberry sauce and fresh blueberries.
