Bounty Cheesecake
Ingredients
- For the Crust:
- 14.1 oz (400g) Oreo cookies
- 2.5 oz (70g) butter, melted
- For the Cheesecake Filling:
- 35.3 oz (1 kg) cream cheese
- 8.8 oz (250g) mascarpone cheese
- 1 packet (1.4 oz/40g) vanilla pudding mix
- 5 eggs
- 3.5 oz (100g) shredded coconut
- 0.7 oz (20g) vanilla sugar
- 5.3 oz (150g) sugar
- For the Topping:
- 2.5 oz (70g) dark chocolate
- 1.8 fl oz (50g) heavy cream (30%)
Instructions
- Preheat your oven to 302°F (150°C) and prepare a 7.9 x 11.8 inch (20x30 cm) baking pan with parchment paper.
- For the crust, crush the Oreo cookies into fine crumbs using a food processor. Mix in the melted butter until well combined.
- Press the crust mixture evenly into the bottom of the prepared baking pan. Set aside while you make the filling.
- In a large mixing bowl, combine the cream cheese, mascarpone cheese, vanilla pudding mix, eggs, shredded coconut, vanilla sugar, and sugar. Mix until just combined.
- Pour the cheesecake filling over the crust in the baking pan, spreading it out evenly.
- Bake in the preheated oven for about 70 minutes, reducing the temperature to 284°F (140°C) halfway through to prevent over-browning. The cheesecake should be set around the edges but slightly jiggly in the center.
- Allow the cheesecake to cool in the oven with the door cracked open for a few minutes, then transfer it to a wire rack to cool completely. Chill in the refrigerator for several hours or overnight.
- For the topping, melt the dark chocolate and heavy cream together in the microwave until smooth. Spread the chocolate ganache over the cooled cheesecake and sprinkle with shredded coconut.
