Best Lemon Cake
Ingredients
- For the Cake:
- 4 eggs
- About 1.5 cups granulated sugar (225g)
- 1 cup milk (250 ml)
- Half a cup vegetable oil (125ml)
- Zest of 1 lemon
- 2-3 tablespoons lemon juice
- About 2.5 cups all-purpose flour
- 1 packet vanilla sugar
- 1 packet baking powder
- For the Glaze:
- 3 tablespoons cream cheese
- 1-2 tablespoons lemon juice
- 1 cup powdered sugar (100g)
Instructions
First, beat the sugar and eggs until they change color and become white. Then, add the vegetable oil, milk, vanilla sugar, lemon zest, and juice, and mix lightly. Next, sift in the flour and baking powder, and gently mix until combined. Finally, pour the batter into a greased and floured cake pan.
Bake in a preheated oven at 175°C (350°F) for 45-50 minutes without opening the lid.
📌 Check with a toothpick—if it comes out clean, it's done. If not, bake a little longer.
For the glaze, mix all the ingredients well and pour it over the warm cake. Enjoy!
