Ingredients
- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 tablespoons milk
- 1/2 cup raisins
- 1 1/2 tablespoons rum
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup walnuts, toasted and chopped
Instructions
Prepare the Bananas:
Mash the ripe bananas in a bowl and set aside.
Cream the Butter and Sugars:
In a separate bowl, use a handheld electric mixer to combine the granulated sugar, brown sugar, and softened butter until smooth and creamy.
Mix Wet Ingredients:
Add the eggs and milk to the butter and sugar mixture, mixing until fully combined.
Combine with Bananas:
Stir the egg and sugar mixture into the mashed bananas.
Soak the Raisins:
In a small bowl, soak the raisins in the rum for about 5 minutes to infuse them with flavor.
Mix Dry Ingredients:
Sift together the flour, baking soda, baking powder, and salt. Gradually add this to the banana mixture, blending until just combined.
Add Walnuts and Raisins:
Fold in the toasted walnuts and the rum-soaked raisins (including any remaining rum).

Bake:
