Ingredients

  • 5 eggs
  • 1 cup (200g) sugar
  • A pinch of salt
  • 7 tablespoons (100ml) oil
  • 2 teaspoons baking powder
  • 1.75 cups (220g) all-purpose flour
  • 1.1 lbs (500g) peeled apples, diced
  • 1/2 cup (50g) shredded coconut

Instructions

  1. Beat the eggs with sugar and salt until fluffy, about 10 minutes. Reduce the mixer speed, add the oil, and mix well.
  2. Sift the flour and baking powder together, then add the shredded coconut and diced apples. Mix briefly until combined.
  3. Transfer the batter to a 9.4x11.8-inch (20x30 cm) baking tray lined with parchment paper, smooth the top, and bake in a preheated oven at 338°F (170°C) for 35-40 minutes or until a toothpick inserted into the center comes out clean. Enjoy your delicious traybake!
