Angel Eyes cookies
Ingredients
- 150 g cold butter
- 2 egg yolks
- 250 g all-purpose flour
- 100 g powdered sugar
- 2 packets vanilla sugar
Instructions
- Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) for both upper and lower heat settings.
- In a large mixing bowl, combine 150 g of cold butter (cut into small pieces), 2 egg yolks, 250 g of all-purpose flour, 100 g of powdered sugar, and 2 packets of vanilla sugar.
- Use your hands or a mixer to knead the ingredients together until a smooth dough forms.
- Once the dough is ready, roll it into small balls, each about the size of a cherry, and place them on baking sheets lined with parchment paper.
- Using your thumb or the back of a small spoon, make an indentation in the center of each dough ball to create a well.
- Bake the cookies in the preheated oven for about 8-10 minutes, or until they are just set and remain light in color. Be careful not to overbake them.
- Remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once the cookies are cooled, you can fill the indentations with your favorite jam, jelly, or frosting, if desired.
