These bars are perfect for a quick snack, a healthy dessert, or even breakfast on the go. Plus, they’re super easy to make and a great way to use up those extra zucchinis from your garden.

Ingredients

  • For the Bundt Cake:
  • 5 eggs
  • 1 1/2 cups granulated sugar
  • 6 tablespoons unsalted butter
  • 3/4 cup heavy cream (36%)
  • Zest of 2 oranges
  • Pinch of salt
  • 1/4 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup dried cranberries
  • 1 1/2 cups all-purpose flour
  • For the Ganache:
  • 1 cup chocolate chips
  • 1/2 cup heavy whipping cream
  • 2 tablespoons Grand Marnier

Instructions

Prepare the Batter:

In a large bowl, use an electric mixer to beat the eggs until foamy.
Add the granulated sugar and continue mixing on high speed for another minute.
Zest the oranges and add the zest to the egg mixture, then mix in the melted butter just until combined.

Mix in the Cream:

Lightly whisk in the heavy cream.

Combine Dry Ingredients:

In a separate bowl, mix the salt, cinnamon, baking powder, baking soda, and flour.
Sift the dry ingredients into the egg mixture and gently fold them in with a whisk.

Prepare the Bundt Pan:

Coat the inside of a bundt pan with nonstick spray, then pour the batter into the pan.

Add the Cranberries:

Sprinkle the dried cranberries on top and lightly press a few of them into the batter with a spatula.

Bake:

Bake at 350°F for 40 minutes, or until a toothpick inserted into the center comes out clean.

Make the Ganache:

While the cake is baking, prepare the ganache. Place the chocolate chips in a bowl.
Heat the heavy whipping cream until it just starts to boil, then pour it over the chocolate chips along with the Grand Marnier.
Let it sit for about a minute, then stir until smooth.

Finish the Cake:

Once the cake has cooled, pour the chocolate ganache over the top, allowing it to drip down the sides.
