Ingredients

  • 1/3 teaspoon vanilla powder
  • 1/2 teaspoon speculoos spices or cinnamon
  • 4 eggs
  • 2 1/2 cups milk
  • 3 tablespoons neutral oil
  • For the filling:
  • Homemade or store-bought speculoos spread
  • A few crumbled speculoos cookies

Instructions

In the food processor or blender, start by blending the liquid ingredients: milk, eggs, and oil. Add the speculoos cookies and pulse a few times to ensure thorough mixing. Then, add the dry ingredients: flour, sugar, vanilla, speculoos spices, and salt. Blend again for a few minutes to achieve a smooth and consistent pancake batter. If there's any flour stuck on the blender walls, scrape it down with a spatula and blend again. Pour the batter into a bowl.

The pancake batter is ready to use, and there's no need to let it rest!
Heat a non-stick pan, lightly greased with oiled kitchen paper.
