Strawberry Shortcake Crunch Bars
Ingredients
- Cake Bar:
- 1 box Strawberry cake mix
- 1 stick unsalted butter, melted (or 1/3 cup vegetable oil)
- 1 extra large egg
- 1/2 teaspoon vanilla extract
- Strawberry Crunch Topping:
- 25 Golden Vanilla Oreos, crushed
- 1 box Strawberry Jello Gelatin
- 1/2 stick unsalted butter, melted
- Whipped Cream Cheese Layer:
- 1 package cream cheese (8 oz.)
- 3/4 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Optional Strawberry and vanilla Oreos for decoration
Instructions
- Preheat the oven to 350 degrees F.
- Mix the strawberry cake mix, butter (or oil), egg, and vanilla extract until the dough resembles thick cookie dough. Ignore the instructions on the cake box. Bake for 18-20 minutes.
- For the strawberry crumble, combine crushed Oreos, Strawberry Jello powder, and butter in a bowl. Mix until combined. You can crush the Oreos in a blender or use a sealed plastic bag and a rolling pin. Set this mixture aside.
- Once the cake is done, let it cool.
- While it's cooling, make the whipped cream cheese layer. Soften the cream cheese by beating it for about 2 minutes. Then add powdered sugar, heavy cream, and vanilla extract. Beat for an additional 3-5 minutes until smooth.
- Once the cake is cool, spread the whipped cream cheese layer on top. Sprinkle the strawberry crunch topping, and for a finishing touch, add a strawberry and half a vanilla Oreo on top. Ready to enjoy!
