Apple Pumpkin Bread Rolls 😋
A massive recommendation for baking these incredibly delicious yeast rolls.
You’ll need:
Yeast Dough:
2/3 cup lukewarm milk
0.7 oz fresh yeast
1/3 cup sugar
1/4 tsp salt
4 cups all-purpose flour + some for rolling
1/2 tsp Pumpkin Spice
1/2 cup softened butter + some for greasing
1 large egg
3.5 oz pumpkin puree
Filling:
2 apples
2.5 tbsp brown cane sugar
1 tsp cinnamon
1 tsp vanilla paste
Additionally:
1 egg yolk
1 tbsp milk
1 brush
1-2 baking sheets
Kitchen twine
Pretzel sticks
Here’s how to do it:
For the yeast dough, mix lukewarm milk and sugar in a large bowl. Crumble the yeast into it and let it sit for about 10 minutes.
Mix flour, cinnamon or Pumpkin Spice, and salt. Add the pumpkin puree, softened butter, and egg to the milk-yeast mixture.
Knead with the dough hook of your stand mixer for 5-7 minutes until you have a smooth dough. Then knead it by hand, shape it into a ball, and place it in a clean bowl.
Cover the pumpkin yeast dough and let it rise for about 1 hour in a warm place. The dough should have at least doubled in size.
For the filling, wash, peel, quarter, core, and cut the apples into 1/2 inch cubes.
Put them in a small saucepan with lemon juice, cinnamon, sugar, and vanilla paste and stew them for a few minutes. Don’t let them turn mushy. Set aside to cool.
Preheat the oven to 350°F in top and bottom heat. Line the baking sheets with parchment paper.
Punch down the yeast dough and shape it into a roll on a lightly floured work surface. Divide it into 12-16 pieces and shape them into small balls.
Roll out the balls, place 1-2 teaspoons of apple cubes, and seal them back up. Be neat, so the filling won’t spill out during baking. Shape the dough into uniform balls.
Tie the dough balls like a package with kitchen twine, not too tightly. Place the pumpkin rolls on a baking sheet. I recommend making half of the rolls first, bake them, and produce the rest while they are baking.
Mix the egg yolk and milk. Brush the pumpkin rolls with it.
Bake for about 15 minutes until golden. The rolls are ready when they start to turn brown on the bottom. Take them out of the oven..
