Ever wondered what happens when you combine crazy dessert ideas? Let me break it down for you. Apple pie cheesecake tacos are exactly what they sound like: crispy taco shells filled with creamy cheesecake and topped with scrumptious apple pie filling. They’re a breeze to create, a joy to devour, and a hit for any occasion. Here’s how to whip up a batch of these delectable treats without breaking a sweat.
Ingredients:
Tacos:
- A pack of tortilla wraps
- 2 tablespoons of butter
- 6 Biscoff biscuits
Apple Pie Topping:
- 2 apples
- 2 tablespoons of dark brown sugar
- 1 teaspoon of pumpkin spice or cinnamon
- 1 tablespoon of cornstarch
- 3 tablespoons of water
Cheesecake Filling:
- 280g cream cheese
- 3 tablespoons of caster sugar
- 1 tablespoon of vanilla extract
Biscoff Drizzle:
- 3 tablespoons of Biscoff spread
- This recipe makes 6-8 tacos.
Instructions:
Tacos:
- Use a cookie cutter to make 3.5″ diameter circles from the tortilla wraps.
- Brush one side of each tortilla circle with melted butter, then coat them in Biscoff crumbs. (You can use a food processor to finely grind the Biscoff biscuits.)
- Fold the tortillas in half and place them in between the gaps of an upside-down cupcake tin.
- Bake for 7 minutes at 320°F (160°C).
Apple Pie Topping:
- Peel and dice the apples into small cubes.
- Add 1 tablespoon of butter to a frying pan, and sauté the apples until they begin to soften.
- Combine water and cornstarch, then pour the mixture over the apples and add the brown sugar.
- Sprinkle in the pumpkin spice or cinnamon, and continue to cook over low to medium heat until the apples become saucy and sticky.
Cheesecake Filling:
- Place cream cheese, sugar, and vanilla extract in a mixing bowl. Use an electric beater to blend them until well combined.
- Transfer the cheesecake filling into a piping bag and store it in the fridge until you’re ready to assemble the tacos.
Assemble the Tacos:
- Pipe the cheesecake filling into the center of each taco.
- Top it off with a spoonful of the apple pie topping.
- Heat the Biscoff spread and drizzle it over the tacos.
This recipe makes 6-8 mouthwatering tacos. Enjoy! 🌮🍎🍰
