Ingredients:
For the Caramelized Apples:
- 3 medium apples, grated
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- 1 tablespoon (15g) of butter
- 2 tablespoons (30ml) of milk
- 1 tablespoon (20g) of honey or brown sugar
For the Crumble:
- 3 tablespoons (37g) of brown sugar
- 3 tablespoons (45g) of butter
- 1 teaspoon of vanilla extract
- 3 tablespoons (20g) of ground almonds
- 1/2 cup (65g) of all-purpose flour
- 1/2 teaspoon of cinnamon
For the Cake:
- 3 eggs
- 1/2 cup + 2 tablespoons (125g) of sugar
- 3/4 cup + 1 tablespoon (200ml) of oil
- 3/4 cup + 1 tablespoon (200ml) of milk
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 2 cups (250g) of all-purpose flour
- 2 teaspoons of baking powder
Instructions:
- Kick things off by preheating your oven to 350°F (175°C). Grab a 9-inch (23cm) round baking pan, line it with parchment paper, and give it a good grease.
- Let’s tackle those caramelized apples: peel and grate your apples, give them a good stir with lemon juice, and set them aside.
- Now, in a saucepan, combine the butter, honey (or brown sugar), and milk. Melt it all together while stirring frequently over medium heat. Then, add those grated apples and cook them, stirring regularly, for about 4-5 minutes. Once that’s done, remove it from the heat and let it cool.
- For the crumble topping, mix together the brown sugar, butter, vanilla extract, ground almonds, flour, and cinnamon in a small bowl. Use your fingertips or a fork to create that crumbly texture. Pop it in the fridge while we move on.
- Let’s get to the cake: In a large bowl or the bowl of your trusty stand mixer, whisk up the eggs, sugar, and vanilla extract until they’ve doubled in volume.
