Ingredients

  • Graham Cracker Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons butter, melted
  • Lemon Filling:
  • 14 ounces sweetened condensed milk
  • 5 egg yolks
  • 1/2 cup lemon juice
  • 2 tablespoons lemon zest
  • Topping:
  • Candied lemon zest (optional, recipe below)
  • Powdered sugar (optional)
  • 2 tablespoons key lime and/or lemon zest (optional)
  • Candied Lemon Zest:
  • 2 tablespoons lemon zest
  • 1/4 cup granulated sugar

Instructions

For the Graham Cracker Crust:

  1. Preheat the oven to 375°F.
  2. Spray an 8-inch or 9-inch square pan with cooking spray and line with parchment paper.
  3. In a small bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
  4. Press the mixture firmly into the bottom of the prepared pan, using the bottom of a measuring cup to pack it down.
  5. Bake for 7 minutes, then remove from the oven and let cool.

For the Lemon Filling:

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
  3. Pour the lemon filling over the cooled crust.
  4. Bake for 25 minutes, then let the bars chill for at least 2 hours before serving.

For the Candied Lemon Zest:

  1. In a small bowl, combine the lemon zest and sugar, tossing gently to coat the zest completely with sugar.
  2. Let sit for 30 minutes.

To Serve:

  1. Sprinkle the candied lemon zest and powdered sugar over the cooled bars, if desired.
  2. Cut into squares and store in an airtight container in the refrigerator.
