Ingredients

  • 3 ripe bananas
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 tablespoons milk
  • 1/2 cup raisins
  • 1 1/2 tablespoons rum
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup walnuts, toasted and chopped

Instructions

Prepare the Bananas:

Mash the ripe bananas in a bowl and set aside.

Cream the Butter and Sugars:

In a separate bowl, use a handheld electric mixer to combine the granulated sugar, brown sugar, and softened butter until smooth and creamy.

Mix Wet Ingredients:

Add the eggs and milk to the butter and sugar mixture, mixing until fully combined.

Combine with Bananas:

Stir the egg and sugar mixture into the mashed bananas.

Soak the Raisins:

In a small bowl, soak the raisins in the rum for about 5 minutes to infuse them with flavor.
