Peppermint Brownies
They’re chewy, fudgy, and topped with a creamy peppermint buttercream frosting and a luscious chocolate glaze
Ingredients
- Brownies:
- 4 ounces unsweetened baking chocolate
- 1 cup butter (2 sticks)
- 4 large eggs
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- Peppermint Frosting:
- 2 cups powdered sugar
- 3 tablespoons butter, softened
- 1 teaspoon peppermint extract
- 1 tablespoon milk
- Drop of red food coloring (optional, to make it pink)
- Chocolate Glaze:
- 1 cup chopped high-quality semi-sweet chocolate (or Guittard or Ghirardelli chocolate chips)
- 4-5 candy canes, crushed
Instructions
Preheat and Prep:
Preheat your oven to 350°F. Line a 9x13 inch pan with parchment paper or spray with nonstick cooking spray.
Melt Chocolate:
Roughly chop the unsweetened chocolate and place it in a microwave-safe bowl. Cut the butter into tablespoon-sized pieces and add to the bowl. Microwave in 30-second intervals, stirring in between, until melted and smooth. Set aside.
Mix Wet Ingredients:
In a separate bowl, beat the eggs for about 3 minutes until frothy. Add the sugar and vanilla extract, and mix well. Then, add the melted chocolate mixture and combine.
Combine Dry Ingredients:
In another bowl, mix the flour and baking powder. Gradually stir this into the wet mixture just until combined. Pour the batter into the prepared pan.
Bake:
Bake for 23-27 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool completely before frosting.
Peppermint Frosting:
In a bowl, beat together the powdered sugar, softened butter, peppermint extract, and milk until light and fluffy. Add a drop of red food coloring if desired to make the frosting pink. Gently spread the frosting over the cooled brownies.
Chocolate Glaze:
Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth. Drizzle the melted chocolate over the frosted brownies and sprinkle the crushed candy canes on top.
Serve:
Allow the glaze to set before cutting the brownies into squares. Enjoy these festive treats!
