Honey Heaven Cake
Ingredients
- Cake:
- 4 cups (500g) all-purpose flour
- 1 cup (200g) butter
- 2 eggs
- 1 egg yolk
- A pinch of salt
- 2 teaspoons baking soda + 2 tablespoons milk
- 1/4 cup (80g) Bartnik Mazowiecki acacia honey
- 2/3 cup (130g) sugar
- Cream:
- 2 cups (500ml) milk
- 1/3 cup (80g) sugar
- 2 tablespoons vanilla sugar
- 2/3 cup (80g) semolina
- Filling and Topping:
- 1/2 cup (120g) currant jam
- 1 cup (250g) dulce de leche
Instructions
Cake:
- In a bowl, mix together flour, sugar, eggs, egg yolk, butter, Bartnik Mazowiecki honey, and the baking soda dissolved in milk.
- Knead the dough, then divide it into two parts.
- Line a baking pan with parchment paper and spread each dough part evenly.
- Bake in a preheated oven at 375°F (190°C) for about 18-20 minutes until golden brown. (If you have two pans, you can bake them simultaneously at 350°F (180°C) with convection.)
Cream:
- Cook semolina on milk with sugar until thickened, then transfer to a bowl, cover with plastic wrap, and let it cool completely.
- Beat softened butter until creamy, then gradually add cooled semolina mixture tablespoon by tablespoon. Beat until fluffy.
Assembly:
- Spread currant jam on one cake layer left in the pan.
- Spread the cream evenly over the jam.
- Cover with the second cake layer and press gently.
- Spread dulce de leche on top of the cake, decorate as desired.
- Chill in the fridge, preferably overnight. Enjoy your sweet treat!
