Apple Coconut Traybake
Ingredients
- 5 eggs
- 1 cup (200g) sugar
- A pinch of salt
- 7 tablespoons (100ml) oil
- 2 teaspoons baking powder
- 1.75 cups (220g) all-purpose flour
- 1.1 lbs (500g) peeled apples, diced
- 1/2 cup (50g) shredded coconut
Instructions
- Beat the eggs with sugar and salt until fluffy, about 10 minutes. Reduce the mixer speed, add the oil, and mix well.
- Sift the flour and baking powder together, then add the shredded coconut and diced apples. Mix briefly until combined.
- Transfer the batter to a 9.4x11.8-inch (20x30 cm) baking tray lined with parchment paper, smooth the top, and bake in a preheated oven at 338°F (170°C) for 35-40 minutes or until a toothpick inserted into the center comes out clean. Enjoy your delicious traybake!
