No-Bake Banana Cake
Ingredients
- 200 g tea biscuits
- 2 packs of lemon jelly and 800 ml boiling water
- 4 large bananas
- 350 ml heavy cream
- 350 g mascarpone
- 2 tablespoons powdered sugar
- 3 tablespoons lemon juice
Instructions
Dissolve the jelly in the boiling water and let it cool until it starts to thicken. Arrange the first layer of tea biscuits on a baking sheet lined with parchment paper. Peel the bananas, slice them in half lengthwise, and place them on the biscuits, then drizzle with lemon juice. Pour the thickening jelly over the bananas. Gently place the remaining biscuits on top of the jelly layer. Chill in the fridge until the jelly is completely set. In a bowl, combine the heavy cream, powdered sugar, and mascarpone, and beat until stiff peaks form. Spread the cream mixture over the cake and smooth it out. You can also use a piping bag with a decorative tip, just like I did.
